  • 1 onion, minced
  • 1 clove garlic, minced

  • 1 (14.5-ounce) can diced tomatoes with green chilis, undrained
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can pinto beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed (or any combination of your favorite beans)
  • 1 (28-ounce) can crushed tomatoes
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper (adjust to your spice preference)
  • 1/2 teaspoon crushed red pepper flakes (adjust to your spice preference)
  • Kosher salt and black pepper to taste

Instructions:

  1. Brown the ground beef in a large skillet over medium-high heat. Drain any excess fat.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Stir in the garlic and cook for another minute.
  4. Transfer the ground beef mixture to your crock pot.
  5. In a small bowl, whisk together the beef broth and tomato paste. Pour over the ground beef mixture in the crock pot.
  6. Add the remaining ingredients (diced tomatoes, diced tomatoes with green chilis, beans, crushed tomatoes, chili powder, cumin, cayenne pepper, crushed red pepper flakes) to the crock pot and stir to combine.
  7. Cover and cook on LOW for 5 hours. Season with salt and pepper to taste before serving.

  • 1.5 lbs ground beef (or turkey)
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 1 can (6 oz) tomato paste
  • 2 cans (10 oz) diced tomatoes with green chilies
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15.5 oz) dark red kidney beans, rinsed & drained
  • 1 can (15.5 oz) pinto beans, rinsed & drained
  • 3 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tbsp brown sugar
  • Spices: red pepper flakes, cayenne pepper (optional)
  • Salt & pepper to taste

Instructions

  1. Brown ground meat and onion in a skillet. Add garlic, cook 1 minute. Drain fat and add to crock pot.
  2. Whisk broth and tomato paste, add to crock pot.
  3. Stir in remaining ingredients (diced tomatoes, beans, spices).
  4. Cook on LOW 6-8 hours or HIGH 3-4 hours. Season with salt & pepper.
