  • 8 tbsp melted salted butter
  • ½ cup sugar
  • 6 large egg yolks
  • 2 cans sweetened condensed milk (14 oz each)
  • 2 tbsp finely grated lime zest, plus extra for garnish
  • 1 cup fresh or bottled key lime juice (around 16-20 key limes)
  • 1 cup whipped cream (for serving)

Instructions

  1. Preheat the oven to 325°F (center rack).
  2. In a food processor, blitz graham crackers until fine (about 20 times). Add melted butter and sugar, pulse 10 times. Press the mix into a 9-inch pie pan.
  3. Bake for 15 minutes, then cool.
  4. In a stand mixer, beat egg yolks and condensed milk until thick (3-4 mins). Gently fold in lime zest and juice.
  5. Pour the filling into the crust, bake for 15 mins. Chill in the fridge for 3-4 hours.
  6. Top with whipped cream, sprinkle lime zest. Serve chilled.
