Lasagna Soup

You’ve probably seen it trending on TikTok – Lasagna Soup! This delicious creation takes all the beloved flavors and textures of classic lasagna and transforms them into a warm, comforting soup.

Here’s why lasagna soup is taking the internet by storm:

  • Flavorful and Familiar: It captures the essence of lasagna – savory meat sauce, creamy cheeses, and al dente pasta – but in a simpler, more relaxed format.
  • Easy Weeknight Meal: Lasagna soup comes together quickly and requires minimal effort compared to layering a traditional lasagna.
  • Highly Customizable: Feel free to adjust the ingredients to your preference. Want it lighter? Use ground turkey. Craving a kick? Add more red pepper flakes.

This recipe is my take on the viral lasagna soup craze, and I guarantee you’ll love it!

What is Lasagna Soup?

Think of lasagna soup as a deconstructed and delightful version of the classic dish. It features all the key components – ground meat, tomatoes, pasta, mozzarella, and ricotta – transformed into a hearty and satisfying soup.

  • Building the Base: Olive oil, onion, and garlic form the foundation of our flavorful soup. Sautéing the onion until softened ensures a smooth, non-crunchy texture.
  • Adding Heartiness: Ground beef provides a hearty base and classic lasagna flavor. For a lighter option, substitute ground turkey or even use half Italian sausage for a richer taste.
  • The Tomato Base: Crushed tomatoes are the heart of the soup. Opt for unflavored crushed tomatoes to allow customization with spices.
  • Depth of Flavor: Chicken broth adds depth and complements the lasagna flavors beautifully.
  • Italian Spice Blend: Salt, pepper, basil, oregano, and red pepper flakes create the signature Italian lasagna taste. Adjust the spice level to your preference!
  • The “Lasagna” Part: Lasagna noodles are essential for this soup. However, feel free to use a smaller pasta shape if you prefer.
  • Cheese Heaven: A creamy blend of ricotta, mozzarella, and Parmesan cheese adds richness and indulgence. The heavy cream (optional) further enhances the creamy texture.

Bringing it All Together:

  1. Sauté the onion until softened, then add garlic and cook briefly.
  2. Brown the ground beef and season with salt and pepper.
  3. Stir in crushed tomatoes, chicken broth, and your Italian spice blend. Let it simmer for a flavorful base.
  4. Here comes the noodle decision: Cook the lasagna noodles separately or add them directly to the pot. For the latter method, you’ll likely need additional chicken broth (about 1 cup).
  5. Prepare your creamy cheese mixture by combining ricotta, mozzarella, and Parmesan cheese. A touch of garlic salt adds another layer of flavor (optional).
  6. Serve the hot soup with a generous dollop of the creamy cheese mixture for a truly perfect bite!

This hearty lasagna soup is sure to become a weeknight favorite. It’s easy, flavorful, and guaranteed to satisfy your comfort food cravings!
