- 2 pie dough rounds, store-bought or homemade, at room temp
- 8 Granny Smith apples, peeled and thinly sliced
- ½ cup salted butter
- ¼ cup all-purpose flour
- ½ cup + 1 tbsp granulated sugar
- ¼ cup packed brown sugar
- 1 ½ tsp cinnamon
- ½ tsp nutmeg (optional)
- 1 egg, beaten
Instructions
- Heat oven to 425°F, center rack.
- Melt butter in a pot over medium heat. Stir in flour, sugar, brown sugar, water, 1 tsp cinnamon, nutmeg (if using), and lemon juice. Bring to a boil, then simmer until sugars dissolve (3-5 mins). Remove from heat, add apples, and toss.
- Roll out pie dough on a floured surface. Place one round into a pie plate. Trim edges.
- Spoon apple filling into the crust, forming a slight mound. Top with the second pie dough round. Seal edges with a fork or fingers.
- Mix remaining sugar and cinnamon. Brush beaten egg on top of the pie, sprinkle with cinnamon sugar. Cut four 2-inch slits into the crust.
- Bake on a sheet for 15 mins. Reduce temp to 350°F and bake until golden brown and bubbling (about 45 mins), tenting with foil if needed.
- Cool for at least 2 hours on a rack before serving. Rewarm if desired.
