For the Streusel:

½ cup flour

¼ cup brown sugar

¼ cup granulated sugar

1 tsp cinnamon

¼ cup melted butter

For the Muffins:

  • 1 ½ cups flour
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt *â…“ cup vegetable oil
  • ½ cup packed brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • ¼ cup sour cream
  • 1 cup pumpkin puree

For the Glaze (optional):

  • ½ cup powdered sugar
  • 1-2 tbsp cream or milk

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin pan.
  2. Make the Streusel: Combine flour, brown sugar, granulated sugar, and cinnamon in a bowl. Mix in melted butter until crumbly. Set aside.
  3. Make the Batter: Whisk flour, spices, baking powder, soda, and salt in a bowl. In another bowl, whisk oil, sugars, eggs, vanilla, sour cream, and pumpkin puree until smooth. Gently whisk dry ingredients into wet until just combined.
  4. Bake the Muffins: Divide batter evenly among muffin cups (¾ full). Top with streusel. Bake 22-25 minutes, or until a toothpick comes out clean.
  5. Cool and Glaze (optional): Cool muffins in pan for 10 minutes, then transfer to a wire rack. Whisk powdered sugar and cream/milk for a thin glaze. Drizzle over cooled muffins.
