- 3/4 cup sugar
- 6 tablespoons cornstarch
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 4 cups fresh blueberries
- 2 pie crusts (homemade or store-bought)
- 1 tablespoon butter
- 1 egg
- 1 tablespoon water
- 1 tablespoon coarse sugar (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, whisk together sugar, cornstarch, salt, and cinnamon. Gently toss with blueberries.
- Place one pie crust in a pie dish. Add blueberry mixture and dot with butter.
- Weave strips from the remaining crust to make a lattice top.
- Whisk egg with water and brush over the crust. Sprinkle with coarse sugar (optional).
- Bake for 50 minutes, or until crust is golden brown.
Notes
- Don’t overmix the blueberries to prevent them from bursting.
- For a thicker filling, use 7 tablespoons of cornstarch.
- Let the pie cool completely before slicing for cleaner cuts.
