Ingredients

  • 3/4 cup sugar
  • 6 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 4 cups fresh blueberries
  • 2 pie crusts (homemade or store-bought)
  • 1 tablespoon butter
  • 1 egg
  • 1 tablespoon water
  • 1 tablespoon coarse sugar (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together sugar, cornstarch, salt, and cinnamon. Gently toss with blueberries.
  3. Place one pie crust in a pie dish. Add blueberry mixture and dot with butter.
  4. Weave strips from the remaining crust to make a lattice top.
  5. Whisk egg with water and brush over the crust. Sprinkle with coarse sugar (optional).
  6. Bake for 50 minutes, or until crust is golden brown.

Notes

  • Don’t overmix the blueberries to prevent them from bursting.
  • For a thicker filling, use 7 tablespoons of cornstarch.
  • Let the pie cool completely before slicing for cleaner cuts.
