Ingredients

  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 1 packet fajita seasoning (or your own recipe)
  • 3 bell peppers (green, yellow, red), sliced
  • 1 small onion, sliced
  • 2 cups cooked rice

Instructions

  1. Heat oil in a skillet over medium-high heat. Add chicken and half the fajita seasoning. Cook until chicken is white throughout. Remove and set aside.
  2. Add peppers and onion to the pan. Sprinkle with remaining seasoning and saute until tender-crisp.
  3. Return chicken to the pan and stir to heat through.
  4. Divide cooked rice into 4 containers. Top with chicken fajita mixture.
  5. Refrigerate until ready to eat. Warm in microwave and garnish with cilantro and avocado (optional).
