- 2 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, thinly sliced
- 1 packet fajita seasoning (or your own recipe)
- 3 bell peppers (green, yellow, red), sliced
- 1 small onion, sliced
- 2 cups cooked rice
Instructions
- Heat oil in a skillet over medium-high heat. Add chicken and half the fajita seasoning. Cook until chicken is white throughout. Remove and set aside.
- Add peppers and onion to the pan. Sprinkle with remaining seasoning and saute until tender-crisp.
- Return chicken to the pan and stir to heat through.
- Divide cooked rice into 4 containers. Top with chicken fajita mixture.
- Refrigerate until ready to eat. Warm in microwave and garnish with cilantro and avocado (optional).
