These quesadillas are bursting with flavor! Tender chicken seasoned with Mexican spices mingles with colorful bell peppers and melty cheese for a satisfying and easy meal.

Ingredients

  • 1 lb boneless, skinless chicken breast, diced
  • 1 packet fajita seasoning
  • 1 tbsp vegetable oil
  • 2 green bell peppers, chopped
  • 2 red bell peppers, chopped
  • 1 onion, chopped
  • 10 flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tbsp bacon bits (optional)
  • Salsa and sour cream (for serving)

Instructions

  1. Preheat broiler. Toss chicken with fajita seasoning and broil until cooked through (5 minutes).
  2. Heat oil in a pan, cook peppers, onion, and cooked chicken for 10 minutes.
  3. Preheat oven to 350°F (175°C).
  4. Layer half of each tortilla with chicken mixture, cheeses, and bacon bits (optional). Fold and place on a baking sheet.
  5. Bake quesadillas for 10 minutes, or until cheese melts. Cut into wedges and serve with salsa and sour cream.
