- 1 lb boneless, skinless chicken breast, diced
- 1 packet fajita seasoning
- 1 tbsp vegetable oil
- 2 green bell peppers, chopped
- 2 red bell peppers, chopped
- 1 onion, chopped
- 10 flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 tbsp bacon bits (optional)
- Salsa and sour cream (for serving)
Instructions
- Preheat broiler. Toss chicken with fajita seasoning and broil until cooked through (5 minutes).
- Heat oil in a pan, cook peppers, onion, and cooked chicken for 10 minutes.
- Preheat oven to 350°F (175°C).
- Layer half of each tortilla with chicken mixture, cheeses, and bacon bits (optional). Fold and place on a baking sheet.
- Bake quesadillas for 10 minutes, or until cheese melts. Cut into wedges and serve with salsa and sour cream.
