These tasty smashed potatoes are a delicious and enjoyable side dish or snack! The best time to enjoy them is right out of the oven when they’re crispy and hot.

Ingredients

  • 2 lbs small yellow potatoes
  • 2 tsp sea salt
  • 2 tbsp olive oil (plus more for pans)
  • 1½ tsp garlic powder
  • ¾ tsp onion powder
  • Freshly ground black pepper
  • 1 tbsp chopped fresh herbs (parsley, chives, and/or dill)
  • Optional: Flaky sea salt, Parmesan cheese

Instructions

  1. Preheat oven to 425°F, generously oil 2 baking sheets.
  2. Boil potatoes with 1 tsp salt until fork-tender (15-20 mins).
  3. Drain and cool potatoes, then smash to ¼-inch thickness on oiled sheets.
  4. Drizzle with olive oil, sprinkle with garlic powder, onion powder, remaining salt, and pepper. Roast for 25-35 mins until golden and crisp, rotating pans halfway.
  5. Season with sea salt, fresh herbs, and Parmesan if you fancy. Enjoy your crispy delights!
