- 2 lbs small yellow potatoes
- 2 tsp sea salt
- 2 tbsp olive oil (plus more for pans)
- 1½ tsp garlic powder
- ¾ tsp onion powder
- Freshly ground black pepper
- 1 tbsp chopped fresh herbs (parsley, chives, and/or dill)
- Optional: Flaky sea salt, Parmesan cheese
Instructions
- Preheat oven to 425°F, generously oil 2 baking sheets.
- Boil potatoes with 1 tsp salt until fork-tender (15-20 mins).
- Drain and cool potatoes, then smash to ¼-inch thickness on oiled sheets.
- Drizzle with olive oil, sprinkle with garlic powder, onion powder, remaining salt, and pepper. Roast for 25-35 mins until golden and crisp, rotating pans halfway.
- Season with sea salt, fresh herbs, and Parmesan if you fancy. Enjoy your crispy delights!
