Homemade Egg Bites

These little bites are not only delicious but also super easy to make. Plus, they’re perfect for meal prepping –  whip up a batch on Sunday night and enjoy a healthy, grab-and-go breakfast all week long!

Ingredients

  • 8 eggs
  • â…” cup cottage cheese
  • ¼ tsp salt
  • Pepper
  • 1 ½ cups shredded Gruyère cheese
  • 5 slices cooked, chopped bacon

Instructions

  1. Preheat oven to 300°F (center rack). Add water to a baking sheet below the oven rack to create steam. Spray muffin tin.
  2. Blend eggs, cottage cheese, salt, and pepper for 20 seconds. Stir in shredded cheese.
  3. Fill greased muffin cups â…” full with egg mixture. Top with bacon.
  4. Bake at 300°F for 30-35 minutes, or until centers are set. Cool before removing.
