Delicious Overnight Option: Eggs Benedict Casserol

Ingredients

Scale
  • 12 oz diced Canadian bacon (or thick-cut ham)
  • 6 English muffins (cut into 1-inch cubes)
  • 8 eggs
  • 2 cups milk (or heavy cream/half & half)
  • 1 tsp salt
  • ½ tsp pepper

Sauce::

  • 4 egg yolks
  • ½ cup heavy cream
  • 2 tbsp lemon juice
  • 2 tsp Dijon mustard
  • ½ cup melted butter

Instructions

  1. Grease a 9×13 inch baking dish. Layer diced Canadian bacon, cubed English muffins, and top with remaining Canadian bacon.
  2. Whisk eggs, milk, salt, and pepper in a large bowl. Pour over the casserole and refrigerate overnight.
  3. Preheat oven to 375°F. Bake covered for 35 minutes, then uncover and bake for 10-15 minutes more (knife inserted near the center comes out clean with minimal crumbs).
  4. While baking, whisk sauce ingredients (except butter) in a double boiler (or a metal bowl over simmering water) until thickened. Whisk in melted butter on low heat.
  5. Drizzle sauce over the hot casserole and serve immediately (optional: garnish with parsley).
