- 12 oz diced Canadian bacon (or thick-cut ham)
- 6 English muffins (cut into 1-inch cubes)
- 8 eggs
- 2 cups milk (or heavy cream/half & half)
- 1 tsp salt
- ½ tsp pepper
Sauce::
- 4 egg yolks
- ½ cup heavy cream
- 2 tbsp lemon juice
- 2 tsp Dijon mustard
- ½ cup melted butter
Instructions
- Grease a 9×13 inch baking dish. Layer diced Canadian bacon, cubed English muffins, and top with remaining Canadian bacon.
- Whisk eggs, milk, salt, and pepper in a large bowl. Pour over the casserole and refrigerate overnight.
- Preheat oven to 375°F. Bake covered for 35 minutes, then uncover and bake for 10-15 minutes more (knife inserted near the center comes out clean with minimal crumbs).
- While baking, whisk sauce ingredients (except butter) in a double boiler (or a metal bowl over simmering water) until thickened. Whisk in melted butter on low heat.
- Drizzle sauce over the hot casserole and serve immediately (optional: garnish with parsley).
