  • 6 cups fresh mixed berries
  • ¼ cup all-purpose flour
  • ¾ cup granulated sugar
  • ¼ teaspoon sea salt
  • 1/3 cup chopped fresh mint leaves
  • 2 tablespoons unsalted butter

Biscuits :

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon sea salt
  • 1/2 cup granulated sugar
  • 6 tablespoons unsalted butter
  • 3/4 cup heavy cream
  • 2 tablespoons raw sugar for sprinkling
  • Vanilla ice cream, crème fraîche, or fresh whipped cream for serving

Instructions

  1. Preheat the oven to 400°F.
  2. Wash and prep the berries, cutting strawberries into bite-sized pieces.
  3. Mix berries with flour, sugar, and salt. Put in a 9×13 inch baking dish or 12-inch cast iron skillet. Sprinkle with mint and dot with butter.
  4. Bake berries for 20 minutes until soft and bubbling. Stir gently.
  5. While berries bake, make biscuit dough. Pulse flour, baking powder, salt, and sugar in a food processor. Add butter and pulse until butter is rice-sized. Pour in cream and pulse until dough forms clumps.
  6. Turn dough onto parchment paper, divide into 12 pieces, shaping each into a 2 ½ inch diameter shaggy disk.
  7. Arrange biscuits on hot berries, sprinkle with raw sugar. Bake for 20-25 minutes until biscuits are golden brown.
  8. Serve warm with vanilla or strawberry ice cream, sweetened crème fraîche, or fresh whipped cream.
