- 6 cups fresh mixed berries
- ¼ cup all-purpose flour
- ¾ cup granulated sugar
- ¼ teaspoon sea salt
- 1/3 cup chopped fresh mint leaves
- 2 tablespoons unsalted butter
Biscuits :
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon sea salt
- 1/2 cup granulated sugar
- 6 tablespoons unsalted butter
- 3/4 cup heavy cream
- 2 tablespoons raw sugar for sprinkling
- Vanilla ice cream, crème fraîche, or fresh whipped cream for serving
Instructions
- Preheat the oven to 400°F.
- Wash and prep the berries, cutting strawberries into bite-sized pieces.
- Mix berries with flour, sugar, and salt. Put in a 9×13 inch baking dish or 12-inch cast iron skillet. Sprinkle with mint and dot with butter.
- Bake berries for 20 minutes until soft and bubbling. Stir gently.
- While berries bake, make biscuit dough. Pulse flour, baking powder, salt, and sugar in a food processor. Add butter and pulse until butter is rice-sized. Pour in cream and pulse until dough forms clumps.
- Turn dough onto parchment paper, divide into 12 pieces, shaping each into a 2 ½ inch diameter shaggy disk.
- Arrange biscuits on hot berries, sprinkle with raw sugar. Bake for 20-25 minutes until biscuits are golden brown.
- Serve warm with vanilla or strawberry ice cream, sweetened crème fraîche, or fresh whipped cream.
