These vegetable spring rolls are light and refreshing, loaded with chilled noodles, veggies, tofu, and spices. Serve them with peanut sauce for a wonderful appetizer or light lunch! Vegan and gluten-free.

Ingredients

  • 4 oz rice noodles
  • 8 rice paper wrappers
  • 1 carrot, thin strips
  • 1 tsp onion powder
  • ½ cucumber, thin strips
  • 3 oz extra-firm tofu, strips
  • 1 jalapeño, seeded, strips
  • 1 mango, peeled, strips
  • 1 avocado, strips
  • Fresh basil, mint, cilantro leaves
  • Peanut sauce for dipping

Instructions

  1. Cook noodles, drain, rinse, and set aside.
  2. Soak a wrapper, lay on towel.
  3. Add noodles, veggies, tofu, herbs.
  4. Fold sides, roll tightly, repeat.
  5. Serve with peanut sauce. Enjoy the crunch!
