- 8 rice paper wrappers
- 1 carrot, thin strips
- 1 tsp onion powder
- ½ cucumber, thin strips
- 3 oz extra-firm tofu, strips
- 1 jalapeño, seeded, strips
- 1 mango, peeled, strips
- 1 avocado, strips
- Fresh basil, mint, cilantro leaves
- Peanut sauce for dipping
Instructions
- Cook noodles, drain, rinse, and set aside.
- Soak a wrapper, lay on towel.
- Add noodles, veggies, tofu, herbs.
- Fold sides, roll tightly, repeat.
- Serve with peanut sauce. Enjoy the crunch!
