Cheers! I’m not sure whether summer is complete without homemade ice cream sandwiches. These have the best moist, chewy brownie crust; it keeps up nicely even after being frozen solid. You may also totally customize them using the taste of your preferred ice cream!
Their ease of building makes them perfect for a fun project with the kids. For our personal touch, we prefer to coat the borders with sprinkles, little chocolate chips, or chopped nuts.
The key is to bake the brownie crust just barely so that it stays very soft. Just prepare some brownie batter as directed on your regular recipe and bake it in a larger pan to get a thin layer. Divide it in half and, when it cools, use one half as the foundation of the sandwich.
Now is the exciting time! To somewhat soften it up, rapidly stir in your favorite ice cream flavor using a mixer. You just want it nice and spreading, not soupy. Pile that creamy goodness over the brownie base, then top with the other half of the brownie. Moments later, out of the freezer! Finely made ice cream sandwiches whenever you desire anything refreshing.
Nicest of all? Enjoy them squared off—the brownie crust won’t freeze solid!

Ingredients
Brownies:
- ½ cup sugar (granulated and brown sugar mixed)
- ¼ cup butter
- ¼ cup milk
- 1 ½ cups chocolate chips
- 2 eggs
- 2 tsp vanilla extract
- ½ tsp salt
- 1 cup flour
- ½ tsp baking soda
Ice Cream:
- 8 cups ice cream (any flavor)
Optional Garnishes:
- Sprinkles, mini chocolate chips, or chopped nuts
Instructions
- Preheat oven to 350°F (175°C). Line an 18×13 inch pan with parchment paper.
- Make the Brownies: In a pot, heat sugars, butter, and milk. Remove from heat, stir in chocolate chips, then eggs and vanilla. Add flour, baking soda, and salt, mix until just combined. Pour into pan and bake 12-15 minutes. Let cool completely.
- Prepare Ice Cream: Briefly whip ice cream with a mixer until soft and spreadable.
- Assemble: Cut brownie in half. Spread softened ice cream over one half, top with the other brownie half. Freeze for at least 2 hours.
- Cut & Serve: Cut into sandwiches. Dip edges in sprinkles, chips, or nuts (optional). Wrap and freeze leftovers.
Notes
Gently press the warm brownie flat after baking for even ice cream distribution.
