Homemade Ice Cream

Recipe

Hey there! Summer isn’t complete without homemade ice cream sandwiches, am I right? These are the best because they have a soft, chewy brownie crust that stays perfect even when frozen solid. Plus, you can totally customize them with your favorite ice cream flavor!

These are so easy to make, they’re perfect for a fun project with the kids. We love adding our own personal touch by dipping the edges in sprinkles, mini chocolate chips, or chopped nuts.

Here’s the trick: the brownie crust is baked thin so it stays soft and delicious. Just whip up a batch of brownie batter (like your usual recipe) and bake it in a larger pan for a thin layer. Once it’s cool, cut it in half and use one half as the base for your sandwich.

Now, for the fun part! Grab your favorite ice cream flavor and soften it up a bit with a quick whisk in a mixer. Don’t worry, you don’t want it soupy, just nice and spreadable. Pile that creamy goodness onto your brownie base, then top it with the other half of the brownie. Pop it in the freezer for a while, and voila! Perfect homemade ice cream sandwiches whenever you crave a cold treat.

The best part? The brownie crust won’t freeze rock-solid, so you can easily cut them into squares and enjoy!
