These have the best moist, chewy brownie crust; it keeps up nicely even after being frozen solid. You may also totally customize them using the taste of your preferred ice cream!

Ingredients

Brownies:

  • ½ cup sugar (granulated and brown sugar mixed)
  • ¼ cup butter
  • ¼ cup milk
  • 1 ½ cups chocolate chips
  • 2 eggs
  • 2 tsp vanilla extract
  • ½ tsp salt
  • 1 cup flour
  • ½ tsp baking soda

Ice Cream:

  • 8 cups ice cream (any flavor)

Optional Garnishes:

  • Sprinkles, mini chocolate chips, or chopped nuts

Instructions

  1. Preheat oven to 350°F (175°C). Line an 18×13 inch pan with parchment paper.
  2. Make the Brownies: In a pot, heat sugars, butter, and milk. Remove from heat, stir in chocolate chips, then eggs and vanilla. Add flour, baking soda, and salt, mix until just combined. Pour into pan and bake 12-15 minutes. Let cool completely.
  3. Prepare Ice Cream: Briefly whip ice cream with a mixer until soft and spreadable.
  4. Assemble: Cut brownie in half. Spread softened ice cream over one half, top with the other brownie half. Freeze for at least 2 hours.
  5. Cut & Serve: Cut into sandwiches. Dip edges in sprinkles, chips, or nuts (optional). Wrap and freeze leftovers.

Notes

Gently press the warm brownie flat after baking for even ice cream distribution.
