Risgrøt is a cozy Norwegian rice pudding that’s simple, comforting, and absolutely delightful. It’s easy to make and perfect for celebrations.

Ingredients

  • 1 cup white rice
  • ½ tsp salt
  • 2 cups water
  • 4 tbsp sugar
  • 1/2 tsp ground cardamom
  • 6 cups whole milk
  • 2-4 tbsp butter
  • 2 tsp ground cinnamon
  • Berries (optional)

Instructions

  1. Boil rice and water, then simmer for 10 minutes until water is absorbed.
  2. Add sugar, vanilla, and cardamom; mix well.
  3. Heat to medium, gradually add milk, stirring to avoid burning, about 5 mins per cup.
  4. Spoon into bowls when all milk is in, sprinkle with cinnamon, and top with butter.
  5. Serve with fresh or frozen fruit for a tasty twist!
