- 2 cups flour
- 1 ½ cups sugar
- 1 tsp baking soda (sifted)
- 2 tsp baking powder
- 2 tsp cinnamon
- ½ tsp salt
- 3 eggs (room temperature)
- 1 cup olive oil (or vegetable/corn oil)
- 15 oz pumpkin puree
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two bread pans (8 ½” x 4 ½”).
- In a large bowl, whisk together flour, sugar, baking soda, powder, cinnamon, and salt.
- In another bowl, whisk eggs, oil, and pumpkin puree.
- Pour wet ingredients into dry and whisk until smooth. Divide batter between pans.
- Bake 45-55 minutes (or until a toothpick inserted comes out clean).
- Cool in pans 10-15 minutes, then transfer to a wire rack to cool completely.
Notes
Bake time may vary depending on your oven and pan color. Darker pans cook faster.
