Ingredients

  • 2 cups flour
  • 1 ½ cups sugar
  • 1 tsp baking soda (sifted)
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • ½ tsp salt
  • 3 eggs (room temperature)
  • 1 cup olive oil (or vegetable/corn oil)
  • 15 oz pumpkin puree

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two bread pans (8 ½” x 4 ½”).
  2. In a large bowl, whisk together flour, sugar, baking soda, powder, cinnamon, and salt.
  3. In another bowl, whisk eggs, oil, and pumpkin puree.
  4. Pour wet ingredients into dry and whisk until smooth. Divide batter between pans.
  5. Bake 45-55 minutes (or until a toothpick inserted comes out clean).
  6. Cool in pans 10-15 minutes, then transfer to a wire rack to cool completely.

Notes

Bake time may vary depending on your oven and pan color. Darker pans cook faster.
