- 3 cups flour
- 1 tsp each: salt, baking powder, baking soda, pumpkin pie spice
- 2 cups canned pumpkin (not filling!)
- 2/3 cup each: brown sugar, granulated sugar
- 1 cup applesauce (or canola oil)
- 3 eggs (room temp)
- 1 tbsp vanilla extract
- 1.5 cups chocolate chips (semi-sweet)
- 1/2 cup mini chocolate chips (reserve some for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease and line two loaf pans (8×4 inch) with parchment paper.
- In a large bowl, whisk together flour, salt, baking powder, baking soda, and pumpkin pie spice.
- In another bowl, whisk pumpkin, sugars, applesauce (or oil), eggs, and vanilla.
- Mix the wet ingredients into the dry ingredients just until combined. Don’t overmix!
- Fold in most of the chocolate chips (reserve some minis for topping).
- Divide batter evenly between pans and bake 50-55 minutes, or until a toothpick comes out clean.
- Let cool in pans for 10 minutes before transferring to a wire rack to cool completely.
- Enjoy with the reserved mini chocolate chips sprinkled on top (optional)!
