Starbucks is an incredibly popular coffee shop, I’m pretty sure you can find one or two in every neighborhood. Their pink drink is absolutely refreshing and happens to be one of my favorites. And when it comes to pairing it with a latte, nothing beats their delicious banana bread. So you can only imagine my excitement when I stumbled upon this amazing recipe.

I absolutely love indulging in a slice of freshly baked banana bread. It seems like my Father-in-law shares the same sentiment, as he can’t seem to get enough of it. I make sure to bake him a couple of loaves every week to satisfy his cravings.

Recipe Tips

Here are some helpful tips for the recipe:

  • The batter will have a very thick consistency, but don’t worry, that’s completely normal.
  • If you’re not a fan of nuts or have an allergy, simply omit them from the recipe.
  • In case you don’t have buttermilk, you can easily make your own by adding 1/2 tablespoon of white vinegar to 1/2 cup of whole milk. Let it sit for 10 minutes, give it a good mix, and then use it as directed.
  • I personally use an 8×4 loaf pan for baking, but if you only have a 9×5 loaf pan, that works too. Just keep an eye on the baking time as it may vary slightly.

Is it possible to freeze ripe bananas?

Sure thing! When your bananas start showing those lovely brown freckles, it’s the perfect time to whip up some delicious treats. But if you’re not quite ready to bake, no worries! Simply pop the whole banana into a ziplock freezer bag and freeze it.

When you’re ready to use them, just thaw them out in the fridge overnight or use the defrost setting on your microwave. Don’t worry if they turn a bit mushy after being frozen, that’s completely normal. Happy baking!

Starbucks Copycat Banana Bread is incredibly moist, packed with deliciously ripe bananas, and garnished with crunchy walnuts. It’s an ideal choice for either a delightful breakfast or a scrumptious dessert!

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon (for a little warmth!)
  • 1 egg
  • 1 1/8 cups sugar (I use light brown for extra sweetness but white works too)
  • 1/2 cup vegetable oil
  • 2 tablespoons buttermilk
  • 1 teaspoon vanilla extract (because everything’s better with vanilla!)
  • 3 extra ripe bananas, mashed up
  • 1/2 cup chopped walnuts (for crunch!)

Instructions

  1. Preheat your oven to 325°F. Grease an 8×5 inch loaf pan with nonstick spray, and line it with parchment paper if you want easy removal later.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon until well combined.
  3. In another medium bowl, whisk the egg, sugar, and vegetable oil together until smooth.
  4. Now add the dry ingredients to the wet and mix just until everything is incorporated. Don’t overmix! The batter will be quite thick.
  5. Next, add in the buttermilk, vanilla, and mashed bananas. Fold gently until fully blended.
  6. Pour the batter into your prepared loaf pan and sprinkle the chopped walnuts evenly over the top.
  7. Bake in the center of your oven for 60-75 minutes, until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to finish cooling. Slicing is best after it finishes cooling
