In Just Three Simple Steps, Whip Up Summer
Three easy steps make this ideal summer pie. Juicy strawberries in every mouthful and a flaky, buttery crust will make this your new favorite dessert!
- Seeing impaired Bake the Crust: To blind bake your pie crust—whether handmade or purchased—follow the directions on the box. A hint is this: To stop shrinking, wrap the crust with foil and bake for eight minutes. After that take off the foil and bake for a further five minutes.
- For the sweet strawberry sauce, thoroughly mix the cornstarch, sugar, and water in a small pot. Once boiling, stir for two minutes until thickened. Once off the heat, thoroughly mix in the strawberry jello. Give this fifteen or so minutes to cool.
- Put together and chill: Spoon the chilled sauce over the fresh strawberries in the cooked pie shell. Pie should set in at least three hours, if not overnight, in the refrigerator. For a last burst of summertime delight, serve with freshly made whipped cream.

Ingredients
- 1 (9-inch) pre-baked pie crust (store-bought is fine!)
- 2 tablespoons cornstarch
- 3/4 cup sugar
- 1 cup water
- 1 (3-ounce) package strawberry Jello
- 4 cups fresh strawberries, sliced
- Fresh whipping cream (optional)
Instructions
- Bake the crust: Follow the instructions on the pie crust package for baking. To prevent the crust from shrinking, line it with aluminum foil and bake for 8 minutes. Then, remove the foil and bake for an additional 5 minutes. Let the crust cool completely.
- Make the filling: In a small saucepan, whisk together the cornstarch, sugar, and water until smooth. Bring to a boil and whisk constantly for 2 minutes until thickened. Remove from heat and stir in the strawberry Jello until dissolved. Let the mixture cool slightly, about 15 minutes.
- Assemble the pie: Arrange the sliced strawberries in the cooled pie crust. Pour the cooled jello mixture over the strawberries.
- Chill and serve: Refrigerate the pie for at least 3 hours, or overnight, until set. Serve cold with fresh whipping cream, if desired.
