  • 1 (9-inch) pre-baked pie crust (store-bought is fine!)
  • 2 tablespoons cornstarch
  • 3/4 cup sugar
  • 1 cup water
  • 1 (3-ounce) package strawberry Jello
  • 4 cups fresh strawberries, sliced
  • Fresh whipping cream (optional)

Instructions

  1. Bake the crust: Follow the instructions on the pie crust package for baking. To prevent the crust from shrinking, line it with aluminum foil and bake for 8 minutes. Then, remove the foil and bake for an additional 5 minutes. Let the crust cool completely.
  2. Make the filling: In a small saucepan, whisk together the cornstarch, sugar, and water until smooth. Bring to a boil and whisk constantly for 2 minutes until thickened. Remove from heat and stir in the strawberry Jello until dissolved. Let the mixture cool slightly, about 15 minutes.
  3. Assemble the pie: Arrange the sliced strawberries in the cooled pie crust. Pour the cooled jello mixture over the strawberries.
  4. Chill and serve: Refrigerate the pie for at least 3 hours, or overnight, until set. Serve cold with fresh whipping cream, if desired.
