  • 4 slices thick-cut bacon about 3 ounces
  • 2 tablespoons extra-virgin olive oil
  • 2 sweet potatoes scrubbed clean, peels on
  • 1 1/4 teaspoons kosher salt divided
  • 3/4 teaspoon black pepper
  • 2 medium avocados peeled, pitted, and diced
  • 2 tablespoons buttermilk
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon smoked paprika
  • 3 tablespoons chopped cilantro

Instructions

  1. Begin by preheating your oven to 400 degrees Fahrenheit. Follow the bacon baking instructions provided. Once done, transfer the crispy bacon to a plate lined with paper towels and gently pat it dry. Once cooled, dice the bacon into small pieces and set it aside.
  2. Adjust your oven racks as needed, placing them in the upper and lower thirds of the oven. Increase the oven temperature to 425 degrees Fahrenheit. Line two rimmed baking sheets with foil (if reusing one from the bacon, make sure to replace the foil with a fresh piece). Brush each baking sheet with 1/2 tablespoon of olive oil. Using a mandoline or a very sharp knife, slice the sweet potatoes into 1/2- to 1/4-inch slices.
  3. Arrange the sweet potato slices in a single layer on the oiled baking sheets. Brush the tops of the slices with the remaining 1 tablespoon of olive oil. Sprinkle 1 teaspoon of salt and black pepper over the slices. Bake for 20 to 25 minutes until the slices turn golden brown underneath. Halfway through, rotate the pans 180 degrees and switch their positions on the upper/lower racks. After this initial bake, remove the pans from the oven, flip the sweet potato slices, and roast for an additional 8 to 11 minutes until they become golden on top.
  4. While the sweet potatoes are baking, prepare the avocado mixture. In a small bowl, combine the avocado, lime juice, the remaining 1/4 teaspoon of salt, and smoked paprika. Mash the ingredients lightly with a fork, leaving a slightly chunky texture. Set this mixture aside.
  5. Once the sweet potato slices are fully baked, transfer them to a serving plate. Top each slice with a dollop of the prepared avocado mixture, chopped bacon, and a sprinkle of cilantro. Serve the dish warm or at room temperature, and enjoy your flavorful creation!
