Ingredients

  • 2 lbs ground beef
  • 1 onion, diced
  • 1 jalapeno, seeded and diced (optional)
  • 4 cloves garlic, minced
  • Chili powder (to taste, about 2 ½ tablespoons)
  • 1 tsp cumin
  • 1 green pepper, seeded and diced
  • 1 (28 oz) can crushed tomatoes
  • 1 (19 oz) can kidney beans, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes with juice
  • 1 ½ cups beef broth
  • 1 cup beer (optional)
  • 1 tbsp tomato paste (optional)
  • 1 tbsp brown sugar (optional)
  • Salt and pepper to taste

Instructions

  1. Brown ground beef, onion, jalapeno (if using), and garlic in a large pot. Drain fat.
  2. Add remaining ingredients and bring to a boil.
  3. Reduce heat, simmer uncovered for 45-60 minutes until thickened.
  4. Serve with your favorite toppings like cheese, green onions, or cilantro.
