- 2 lbs ground beef
- 1 onion, diced
- 1 jalapeno, seeded and diced (optional)
- 4 cloves garlic, minced
- Chili powder (to taste, about 2 ½ tablespoons)
- 1 tsp cumin
- 1 green pepper, seeded and diced
- 1 (28 oz) can crushed tomatoes
- 1 (19 oz) can kidney beans, drained and rinsed
- 1 (14.5 oz) can diced tomatoes with juice
- 1 ½ cups beef broth
- 1 cup beer (optional)
- 1 tbsp tomato paste (optional)
- 1 tbsp brown sugar (optional)
- Salt and pepper to taste
Instructions
- Brown ground beef, onion, jalapeno (if using), and garlic in a large pot. Drain fat.
- Add remaining ingredients and bring to a boil.
- Reduce heat, simmer uncovered for 45-60 minutes until thickened.
- Serve with your favorite toppings like cheese, green onions, or cilantro.
