This recipe makes me think of my early years potlucks, when this vibrant salad was always present. Beyond that, who can resist the rich, creamy fusion of cool whip and fruit?

The true miracle of Ambrosia Salad is its versatility. Your artistic blank canvas is fruit! Although any ingredients may be used, this recipe asks for the classic combination of marshmallows, pineapple, cherries, and mandarin oranges. Chopped apples, strawberries or grapes would make great additions. True of the nuts as well! Pecans are a great alternative, even although walnuts or almonds would also work nicely.

  • 1 (15 oz) can mandarin oranges, drained
  • 1 cup chopped fresh pineapple
  • 3/4 cup maraschino cherries, halved and pitted (optional: without stems)
  • 3 cups marshmallows (any color)
  • 1 cup shredded coconut
  • 3/4 cup chopped pecans

Instructions

  1. In a large bowl, whisk together thawed Cool Whip and sour cream until smooth.
  2. Fold in the remaining ingredients (mandarin oranges, pineapple, cherries, marshmallows, coconut, and pecans).
  3. Chill in the refrigerator for at least 1 hour before serving.
