Made with a touch of maple syrup, this apple baked oatmeal is a delicious and healthy breakfast, perfect for the fall season.

Ingredients

  • 2 eggs
  • 2 cups milk (or milk substitute)
  • 1 cup maple syrup (or brown sugar)
  • 2 tsp sea salt
  • 2 tsp baking powder
  • 1 tbsp vanilla extract
  • â…“ cup melted coconut oil
  • 6 cups quick oats
  • 2 apples, diced (½-inch pieces)
  • ½ cup chopped pecans (optional)

Instructions

  1. Preheat oven to 425°F, generously oil 2 baking sheets.
  2. In a bowl, beat eggs. Add milk, maple syrup, salt, baking powder, vanilla, melted coconut oil, oats, apples, and pecans. Mix well.
  3. Pour batter into the dish. Bake 40-45 mins until golden brown and set. Enjoy!
