- 2 eggs
- 2 cups milk (or milk substitute)
- 1 cup maple syrup (or brown sugar)
- 2 tsp sea salt
- 2 tsp baking powder
- 1 tbsp vanilla extract
- â…“ cup melted coconut oil
- 6 cups quick oats
- 2 apples, diced (½-inch pieces)
- ½ cup chopped pecans (optional)
Instructions
- Preheat oven to 425°F, generously oil 2 baking sheets.
- In a bowl, beat eggs. Add milk, maple syrup, salt, baking powder, vanilla, melted coconut oil, oats, apples, and pecans. Mix well.
- Pour batter into the dish. Bake 40-45 mins until golden brown and set. Enjoy!
