- 1.5 lbs ground beef (or turkey)
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 3 cups beef broth
- 1 can (6 oz) tomato paste
- 2 cans (10 oz) diced tomatoes with green chilies
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 can (15.5 oz) dark red kidney beans, rinsed & drained
- 1 can (15.5 oz) pinto beans, rinsed & drained
- 3 tbsp chili powder
- 2 tsp ground cumin
- 1 tsp smoked paprika
- 1 tbsp brown sugar
- Spices: red pepper flakes, cayenne pepper (optional)
- Salt & pepper to taste
Instructions
- Brown ground meat and onion in a skillet. Add garlic, cook 1 minute. Drain fat and add to crock pot.
- Whisk broth and tomato paste, add to crock pot.
- Stir in remaining ingredients (diced tomatoes, beans, spices).
- Cook on LOW 6-8 hours or HIGH 3-4 hours. Season with salt & pepper.
Notes
- Use ground chuck for a richer flavor, or sirloin for leaner chili.
- Substitute ground turkey, pork, or chicken for ground beef.
- Like it spicy? Add more red pepper flakes and cayenne.
- Offer toppings like cheese, sour cream, or onions for customization.
- Leftovers store well in the fridge (up to 4 days) or freezer.
