This hearty crock pot chili is perfect for busy weeknights. Just throw everything together in the pot in the morning and come dinner time, you’ll have a delicious and satisfying meal ready to go.

Ingredients

Scale
  • 1.5 lbs ground beef (or turkey)
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 1 can (6 oz) tomato paste
  • 2 cans (10 oz) diced tomatoes with green chilies
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15.5 oz) dark red kidney beans, rinsed & drained
  • 1 can (15.5 oz) pinto beans, rinsed & drained
  • 3 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tbsp brown sugar
  • Spices: red pepper flakes, cayenne pepper (optional)
  • Salt & pepper to taste

Instructions

  1. Brown ground meat and onion in a skillet. Add garlic, cook 1 minute. Drain fat and add to crock pot.
  2. Whisk broth and tomato paste, add to crock pot.
  3. Stir in remaining ingredients (diced tomatoes, beans, spices).
  4. Cook on LOW 6-8 hours or HIGH 3-4 hours. Season with salt & pepper.

Notes

  • Use ground chuck for a richer flavor, or sirloin for leaner chili.
  • Substitute ground turkey, pork, or chicken for ground beef.
  • Like it spicy? Add more red pepper flakes and cayenne.
  • Offer toppings like cheese, sour cream, or onions for customization.
  • Leftovers store well in the fridge (up to 4 days) or freezer.
