Easy Homestyle Chicken Noodle Soup

I’ve got this amazing recipe for Easy Homestyle Chicken Noodle Soup that’ll knock your socks off. It’s bursting with flavor, packed with veggies, and way better than anything you’ll get at Panera, Campbell’s, or Progresso. Plus, it’s a breeze to make, especially with a rotisserie chicken on hand.

Back in the day, Panera Bread was my happy place. Chicken noodle soup was my all-time favorite, always paired with a sandwich or salad. It’s healthy, comforting, and surprisingly low in calories. The best part? You can ditch the store-bought stuff and whip up this amazing soup from scratch right at home! That way, you know exactly what’s going in it.

Noodle Choices:

  • Egg Noodles: My personal favorite. They soak up all that delicious broth goodness without getting mushy.
  • Feel free to experiment! Rotini, spaghetti, orzo – you name it.

Chicken Options:

  • Skinless chicken breasts are my go-to, but thighs work great too. Dark meat brings more flavor and tenderness, and cooks in the same amount of time.
  • In a hurry? Grab a rotisserie chicken or use any pre-cooked chicken you have on hand. Just toss it in with the noodles at the end.
  • Want the classic experience? Go for bone-in chicken pieces, or even a whole chicken. It’s totally up to you!

The Power of Soup:

Chicken noodle soup has always been a lifesaver when you’re feeling under the weather. Here’s why:

  • Bone broth magic: If you use bone-in chicken and simmer those bones in the broth, you get a ton of health benefits. Bone broth is all the rage for a reason!
  • Broth on the mend: Broth is a natural decongestant, helping you breathe easier.
  • Veggie Powerhouse: Carrots, onions, and celery are the holy trinity of this soup. They’re loaded with vitamins A and C, plus antioxidants that give your immune system a boost. (Don’t forget the herbs like thyme and bay leaf, they add another layer of flavor and goodness!)
  • Noodle Nirvana: The noodles add substance and keep you feeling full and satisfied.

Making This Homestyle Soup:

For the nitty-gritty details and exact measurements, check out the recipe card below. But here’s the basic rundown:

  1. Throw everything in your slow cooker or pressure cooker: chicken, broth, veggies, herbs, spices, and a squeeze of lemon juice.
  2. Let it cook its magic.
  3. Shred the chicken and add it back to the pot with your favorite noodles.

That’s it! You’re ready to ladle up a big bowl of comforting, flavorful goodness. Enjoy!

Easy Homestyle Chicken Noodle Soup that’ll knock your socks off. It’s bursting with flavor, packed with veggies, and way better than anything you’ll get at Panera, Campbell’s, or Progresso.

  • Total Time: 4 hours 35 minutes
  • Yield: 8 cups 1x

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts (or thighs)
  • 1/2 cup chopped onion
  • 2 cups diced carrots (about 3 carrots)
  • 1 cup diced celery (about 3 stalks)
  • 3 minced garlic cloves
  • 78 cups chicken broth (use 67 cups for thicker soup)
  • 1 tablespoon Better Than Bouillon (optional)
  • 1 bay leaf
  • 1/2 teaspoon thyme
  • Salt and pepper to taste
  • 12 tablespoons lemon juice (adjust to taste)
  • 67 oz egg noodles (about 3 cups)

Instructions

Slow Cooker:

  1. Combine all ingredients except noodles in the slow cooker.
  2. Cook on HIGH for 3-4 hours or LOW for 7-8 hours.
  3. Remove chicken and bay leaf, shred chicken, and return to pot with noodles.
  4. Cook for an additional 10-20 minutes until noodles are soft. Taste and adjust seasonings.

Instant Pot:

  1. Saute onions, carrots, celery, and garlic in olive oil for 2-3 minutes.
  2. Add remaining ingredients except noodles. Cook on Manual High Pressure for 10 minutes.
  3. Let pressure release naturally for 10 minutes.
  4. Shred chicken and return to pot.
  5. Saute noodles in the pot until softened. Taste and adjust seasonings.

Notes

  • Makes 8-10 cups of soup.
  • Recipe works with chicken thighs (darker meat, more flavor).

Tips:

  • Use rotisserie chicken or pre-cooked chicken for a shortcut. Add at the end with noodles.
  • Classic recipe uses bone-in chicken (no cook time adjustment needed).
  • Leftovers last 3-4 days in the fridge (noodles will soften, consider making fresh for reheating).
  • Taste the broth often and adjust seasonings as needed.
