- 1 clove garlic
- 16 ounces shredded cheese (Gruyere and Fontina blend, or similar)
- 2 tablespoons cornstarch
- 1 cup dry white wine (Pinot Gris, Sauvignon Blanc, or Chardonnay)
- 1 teaspoon lemon juice
- Pinch of nutmeg
- Salt and pepper (to taste)
Instructions
- Rub garlic clove inside a pot, then discard.
- Combine shredded cheese and cornstarch in a bag, shake to coat.
- Heat wine and lemon juice in the pot until simmering.
- Slowly whisk in cheese a handful at a time until melted and smooth. Reduce heat if needed to prevent boiling.
- Remove from heat, whisk in nutmeg. Season with salt and pepper to taste.
- Serve immediately. Keep warm in a fondue pot or over a small candle.
