- 2 tbsp butter
- 5 yellow squash (sliced 1/4″)
- 1 onion (chopped)
- Salt, pepper
- ¼ tsp cayenne pepper (optional)
- 2 eggs
- 1/2 cup cheddar cheese
- 1/2 cup Pepper Jack cheese
- 8 oz sour cream
- 1 sleeve buttery crackers (crushed)
- 2 tbsp melted butter
Instructions
- Preheat oven to 350°F (175°C).
- Melt 2 tbsp butter in a skillet over medium heat. Sauté squash, onion, salt, pepper, and cayenne pepper (optional) until tender.
- In a bowl, whisk eggs, cheese, and sour cream. Stir in cooked squash and onion mixture.
- Spray a 9×13 inch baking dish and pour in the casserole mixture. Top with crushed crackers and melted butter.
- Bake for 30-40 minutes, or until golden brown.
