This Southern Squash Casserole – oh man, where do I even begin? It’s the ultimate comfort food, the kind of dish that screams holidays and family gatherings. Growing up, it was the only way I’d touch squash.

Ingredients

  • 2 tbsp butter
  • 5 yellow squash (sliced 1/4″)
  • 1 onion (chopped)
  • Salt, pepper
  • ¼ tsp cayenne pepper (optional)
  • 2 eggs
  • 1/2 cup cheddar cheese
  • 1/2 cup Pepper Jack cheese
  • 8 oz sour cream
  • 1 sleeve buttery crackers (crushed)
  • 2 tbsp melted butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Melt 2 tbsp butter in a skillet over medium heat. Sauté squash, onion, salt, pepper, and cayenne pepper (optional) until tender.
  3. In a bowl, whisk eggs, cheese, and sour cream. Stir in cooked squash and onion mixture.
  4. Spray a 9×13 inch baking dish and pour in the casserole mixture. Top with crushed crackers and melted butter.
  5. Bake for 30-40 minutes, or until golden brown.
