- 15 honey graham crackers
- 8 tbsp melted salted butter
- ½ cup sugar
- 6 large egg yolks
- 2 cans sweetened condensed milk (14 oz each)
- 2 tbsp finely grated lime zest, plus extra for garnish
- 1 cup fresh or bottled key lime juice (around 16-20 key limes)
- 1 cup whipped cream (for serving)
Instructions
- Preheat the oven to 325°F (center rack).
- In a food processor, blitz graham crackers until fine (about 20 times). Add melted butter and sugar, pulse 10 times. Press the mix into a 9-inch pie pan.
- Bake for 15 minutes, then cool.
- In a stand mixer, beat egg yolks and condensed milk until thick (3-4 mins). Gently fold in lime zest and juice.
- Pour the filling into the crust, bake for 15 mins. Chill in the fridge for 3-4 hours.
- Top with whipped cream, sprinkle lime zest. Serve chilled.
