Mahi mahi, a firm and lean fish from warm tropical waters, is a hidden gem. It’s a fantastic, more affordable alternative to halibut.

Ingredients

  • Lemon (1)
  • Mahi Mahi fillets (4, 4-6 oz each)
  • Salt (1 1/4 tsp + extra)
  • Pepper
  • Olive Oil (2 tbsp)
  • Garlic (1 clove, minced)
  • Butter (4 tbsp, cold, cubed)
  • Parsley (1 tbsp, chopped)

Instructions

  1. Prep: Cut lemon in half. Slice half and juice the other (about 1.5 tbsp). Pat mahi mahi dry, season with 1 tsp salt and pepper.
  2. Sear: Heat oil in a pan over medium-high heat until hot. Sear mahi mahi for 4 minutes per side, until cooked through and flaky. Transfer to a plate.
  3. Sauce: Reduce heat to low, add lemon juice, garlic, and remaining salt. Scrape browned bits from the pan.
  4. Finish: Add lemon slices and butter one piece at a time, stirring until melted. Remove from heat, stir in parsley and season with extra salt/pepper if needed. Pour sauce over mahi mahi and serve immediately.
