Warm peach cobbler is, to tell the truth, comfort food nirvana. And you can probably guess what improves it even more. Really cute little versions! Oh incredibly delicious and ideal for portion management (wink wink), these bite-sized marvels.

Ingredients

Scale
  • 1 cup flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • Pinch of salt
  • 3/4 cup milk
  • 1/2 cup melted butter
  • 1 can (diced) peaches
  • Brown sugar
  • Cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease muffin tins.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. Mix in milk and melted butter until just combined.
  4. Fill muffin cups 2/3 full with batter.
  5. Top each muffin with 1 tablespoon diced peaches, then sprinkle with brown sugar and cinnamon.
  6. Bake for 12 minutes, or until golden brown.
  7. Let cool slightly before removing from pan.

Notes

  1. Use a cookie scoop to easily portion the batter into muffin cups.
  2. For a streusel topping, combine brown sugar and cinnamon with a fork and crumble over the batter before baking.
