- 1 cup flour
- 1 cup sugar
- 2 teaspoons baking powder
- Pinch of salt
- 3/4 cup milk
- 1/2 cup melted butter
- 1 can (diced) peaches
- Brown sugar
- Cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease muffin tins.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- Mix in milk and melted butter until just combined.
- Fill muffin cups 2/3 full with batter.
- Top each muffin with 1 tablespoon diced peaches, then sprinkle with brown sugar and cinnamon.
- Bake for 12 minutes, or until golden brown.
- Let cool slightly before removing from pan.
Notes
- Use a cookie scoop to easily portion the batter into muffin cups.
- For a streusel topping, combine brown sugar and cinnamon with a fork and crumble over the batter before baking.
