- 6–8 peaches, peeled, sliced (about 3–4 pounds)
- 2 tsp lemon juice
- ¼ cup sugar (adjust to peach sweetness)
- 2 tbsp flour
- 1 tsp vanilla extract
- Pinch of salt
- ¼ tsp cinnamon
Topping:
- ¾ cup packed light brown sugar
- ½ cup flour
- ½ cup quick oats
- 1 tsp each cinnamon and nutmeg
- ½ cup (1 stick) softened butter
Instructions
- Preheat oven to 350°F (175°C). Butter an 8×8 inch baking pan.
- Peel, slice peaches, and toss with lemon juice in a bowl. Let sit 15 minutes.
- In another bowl, combine brown sugar, flour, oats, spices. Cut in softened butter until crumbly.
- Drain some peach juice (optional). Add flour, vanilla, salt, cinnamon to peaches.
- Pour peaches into prepared pan. Sprinkle crumb topping evenly.
- Bake at 350°F (175°C) for 30-35 minutes, or until golden brown.
- Serve warm or at room temperature with ice cream (optional).
