That’s where these Air Fryer Salmon Patties come in. They’re a fantastic way to use up leftover salmon, or even canned salmon if you’re in a pinch.

Ingredients

  • 2 eggs
  • 1/4 cup red onion, chopped
  • 1/4 cup dill, chopped
  • 2 tbsp mayonnaise (Sir Kensington’s recommended)
  • 2 tsp Dijon mustard
  • 1 tsp Old Bay seasoning
  • 12 oz cooked/canned wild salmon (flaked)
  • 1/2 cup panko breadcrumbs (plain or gluten-free)
  • Olive oil spray
  • Lemon wedges (for serving)

Instructions

  1. Prep your air fryer: Line the basket with parchment paper or spray with oil.
  2. Mix it up: In a bowl, whisk together eggs, onion, dill, mayo, mustard, and Old Bay. Add flaked salmon and panko, then mix well.
  3. Freeze for 10 minutes (helps them hold their shape). If the mixture seems wet, add more panko.
  4. Form and cook: Shape the mixture into 6 firm patties. Air fry them at 400°F for 8-10 minutes, flipping halfway through, until golden brown.
  5. Enjoy! Serve on a bed of greens, buns, or on their own with a squeeze of lemon.

Notes

For a fancy touch, whip up a remoulade sauce by mixing mayo, lemon juice, and capers (optional). Drizzle over the patties for extra flavor.
