- 2 eggs
- 1/4 cup red onion, chopped
- 1/4 cup dill, chopped
- 2 tbsp mayonnaise (Sir Kensington’s recommended)
- 2 tsp Dijon mustard
- 1 tsp Old Bay seasoning
- 12 oz cooked/canned wild salmon (flaked)
- 1/2 cup panko breadcrumbs (plain or gluten-free)
- Olive oil spray
- Lemon wedges (for serving)
Instructions
- Prep your air fryer: Line the basket with parchment paper or spray with oil.
- Mix it up: In a bowl, whisk together eggs, onion, dill, mayo, mustard, and Old Bay. Add flaked salmon and panko, then mix well.
- Freeze for 10 minutes (helps them hold their shape). If the mixture seems wet, add more panko.
- Form and cook: Shape the mixture into 6 firm patties. Air fry them at 400°F for 8-10 minutes, flipping halfway through, until golden brown.
- Enjoy! Serve on a bed of greens, buns, or on their own with a squeeze of lemon.
Notes
For a fancy touch, whip up a remoulade sauce by mixing mayo, lemon juice, and capers (optional). Drizzle over the patties for extra flavor.
