Ingredients

  • 1 tbsp olive oil
  • ½ cup diced onion
  • ½ cup diced bell pepper (any color)
  • 2 cloves garlic, minced
  • 1 tbsp butter
  • 2 ¼ cups water
  • 1 box Zatarain’s® Spanish Rice
  • 1 ½ cups salsa (medium or adjust to your spice preference)
  • 1 can (15 oz) black beans, rinsed & drained
  • â…” cup frozen corn
  • 2 cups shredded rotisserie chicken
  • 1 cup shredded cheddar cheese
  • (Optional toppings: sour cream, cilantro, corn chips)

Instructions

  1. Preheat oven to 375°F. Grease a casserole dish.
  2. Sauté onion, pepper, and garlic in olive oil until softened.
  3. Add water, rice, and ½ cup salsa. Bring to a boil, then simmer covered for 20 minutes.
  4. Stir in beans and corn. Spread in casserole dish.
  5. Top with chicken, remaining salsa, and cheese.
  6. Bake uncovered for 10-15 minutes, or until cheese melts.
  7. Serve with desired toppings (optional).
