Greetings to all burger lovers! These days I’m really into smash burgers. These bad boys are incredibly easy to make when you need a quick and hearty supper.

While I like to experiment with different flavors, I really love smash burgers. Like a burger time capsule, they nod to classic diner cuisine.

Just the name is the secret to a great burger. Pushing the burger down thin while it cooks gives you an incredible crust that is crispy on the outside and really juicy within. These rescue my life on weeknights since all of this magic happens in a few minutes.

  6. This is when the fun starts, the Smash! Using a large, flat metal spatula, press the meat balls as flatly as you can. Thin patties won’t matter since you’ll be doubling them up for additional juicy taste. To prevent sticking, one little trick is to wrap the meat with parchment paper.
  7. Seasoning Up: After quickly tossing in some salt and pepper, cook your smashed patties for two minutes.
  8. As you turn the patties with your spatula, scrape off those delicious browned bits on the bottom of each.
  9. Top a burger with a slice of cheese for Melty Cheese Magic.
  10. Give the beef another minute or two once it is cooked through. Then place the cheeseless patty on top of the cheesy one. The cheese is pushed in between for the melted enjoyment.

Ingredients

  • 1.5 lbs ground beef (80/20)
  • Salt and pepper
  • 4 slices American cheese
  • Hamburger toppings (tomato, lettuce, onion, etc.)
  • 4 brioche buns
  • Butter

Instructions

  1. Make 3 oz balls of ground beef. Flatten them into thin patties (use a spatula and parchment paper!). Season with salt and pepper.
  2. Toast the buns with butter in a skillet.
  3. Heat a griddle to 400°F. Smash and cook patties for 2 minutes per side.
  4. Add cheese to one patty in the last minute. Stack patties to melt cheese.
  5. Build your burger on the toasted bun with your favorite toppings!
