Easy and Flavorful Beef Taco Salad for Warm Weather Dinners

Hey everyone, I’m craving satisfying salads for dinner. This beef taco salad hits the spot perfectly – it’s packed with veggies, protein, healthy fats, and has the most delightful crunch from Doritos. The hardest part? Resisting the urge to devour the entire bag of chips while making the salad!

The secret weapon of this recipe? A crazy-easy, two-ingredient dressing that’s actually kind of magical. Just mix your favorite salsa with sour cream, and voila! You’re guaranteed a delicious sauce. Feel free to use low-fat sour cream if you prefer, and for a thinner consistency, add a squeeze of fresh lime juice.

Here’s how to whip up this delicious taco salad:

  1. Brown the Beef: Cook the ground beef in a skillet with your favorite taco seasoning for 8-10 minutes, or until fully cooked through. Drain any excess fat.
  2. Prep the Salad: Wash and chop your favorite salad fixings and toss them into a large bowl.
  3. Make the Dressing: In a separate bowl, whisk together salsa and sour cream until smooth and creamy.
  4. Assemble the Salad: Pour the cooked beef over the salad ingredients. Tip: Add the Doritos last to maintain their delightful crunch!
  5. Dig In! Drizzle the creamy salsa dressing over your salad and enjoy a fiesta in a bowl!

Bonus Tip: While this recipe uses pre-made taco seasoning for convenience, feel free to experiment and create your own spice blend using pantry staples!
