Easy and Flavorful Beef Taco Salad for Warm Weather Dinners

Ingredients

  • 1 tbsp olive oil
  • 1 lb lean ground beef
  • 1 tbsp chili powder
  • 1 tsp each: garlic powder, onion powder, smoked paprika, ground cumin
  • 3/4 cup each: sour cream, salsa
  • 6 cups chopped romaine lettuce
  • 3/4 cup halved cherry tomatoes
  • 1/2 cup chopped red onion
  • 1 cup shredded cheese
  • 1/2 cup each: drained corn, black beans
  • 1/2 avocado, sliced/chopped
  • 1 cup crushed Doritos
  • 1 tbsp chopped fresh cilantro (optional)
  • Salt & pepper

Instructions

  1. Heat oil in a skillet over medium-high heat. Add ground beef and spices, cook until browned (8-10 minutes), drain excess fat if needed.
  2. While beef cooks, chop salad ingredients and mix sour cream with salsa for dressing.
  3. Combine lettuce, tomatoes, onion, cheese, corn, beans, and avocado in a large bowl.
  4. Let beef cool slightly, then add to the salad with crushed Doritos (last to prevent sogginess).
  5. Toss with dressing, season with salt and pepper, and enjoy!
