- 1 tbsp olive oil
- 1 lb lean ground beef
- 1 tbsp chili powder
- 1 tsp each: garlic powder, onion powder, smoked paprika, ground cumin
- 3/4 cup each: sour cream, salsa
- 6 cups chopped romaine lettuce
- 3/4 cup halved cherry tomatoes
- 1/2 cup chopped red onion
- 1 cup shredded cheese
- 1/2 cup each: drained corn, black beans
- 1/2 avocado, sliced/chopped
- 1 cup crushed Doritos
- 1 tbsp chopped fresh cilantro (optional)
- Salt & pepper
Instructions
- Heat oil in a skillet over medium-high heat. Add ground beef and spices, cook until browned (8-10 minutes), drain excess fat if needed.
- While beef cooks, chop salad ingredients and mix sour cream with salsa for dressing.
- Combine lettuce, tomatoes, onion, cheese, corn, beans, and avocado in a large bowl.
- Let beef cool slightly, then add to the salad with crushed Doritos (last to prevent sogginess).
- Toss with dressing, season with salt and pepper, and enjoy!
